Easy Pancit Canton

Pancit is a traditional Filipino noodle dish with endless variations. One of the most common one is pancit canton. It is similar to chow mein or lo mein. A homecooked or restaurant version can be as complicated as one’s preference, including a long list of ingredients such as shrimp, pork, chicken, squid, different kinds of vegetables and even some pork cracklings for toppings. But for those who just want a quick snack, there is always the Lucky Me Instant Pancit Canton which can be ready in about 5 minutes using a microwave.
This easy pancit canton recipe uses 3-minute ramen noodles and can be prepared in about 10 minutes. You can even add some meat to it by using precooked chicken (left over from roasted chicken) or shrimp. Perfect for an afternoon meryenda.

Ingredients
- 4 Ramen Noodles
- 1 cup cooked chicken, cut into small pieces
- 2 tbsp lemon juice
- 3 tbsp soy sauce
- 3 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 small onion, chopped
- 4 cloves garlic, minced
- 1/4 bell pepper, diced
- 1/2 cup shredded carrots
- 3 tbsp water
- green onions, chopped for toppings
Instructions
- Bring water to boil and cook ramen noodles for 2 minutes.
- Heat skillet and add about 1 tsp oil to saute the garlic, onion, carrot and bell pepper.
- Add the precooked chicken or shrimp. Shrimp may take about 2-3 minutes to cook.
- Add the lemon juice, soy sauce, olive oil and water.
- Bring heat to low and add the cooked ramen noodles immediately.
- Mix thoroughly.
- Serve with chopped green onions.
