Simple Grilled Zucchini and Yellow Squash

Spring time is grill time! Here’s something simple and tasty way to add a vegetable variety on your next bbq cookout. You can experiment with the seasoning; try cajun salt, garlic powder, or whatever you have in your pantry. This version is as simple as it gets with just extra virgin olive oil, sea salt, and freshly ground black pepper.
We slice the squash into about 1/4 inch thick pieces. You can do this however you want – diagonal, crosswise, or lenghtwise. In the picture below, we cut them lengthwise. Drizzle both sides with extra virgin olive oil and season with sea salt and freshly ground black pepper.
Throw them on to the hot grill and cook for 5 to 6 minutes on each side. Make sure the grill is very hot to get nice grill marks on them!

Ingredients
- Zucchini squash
- Yellow squash
- Extra virgin olive oil
- Sea salt and fresh ground black pepper
Instructions
- Heat up the grill to a high setting.
- Trim both ends of the zucchini then cut lengthwise, about 1/4 inch thick each
- Lay the vegetable slices on a baking tray, drizzle olive oil and season with sea salt and freshly ground black pepper, then flip the veggie slices and repeat on the other side.
- When the grill is hot, lay the vegetable slices on the grill one by one. Make sure the grill is hot to get nice grill marks.
- Cook for about 4 to 6 minutes on each side or until the vegetables are tender. This will depend on the size of your grill and the amount of heat it is able to generate. We cooked ours for the full 6 minutes.
